Elcione

Elcione takes its name from the centuries-old oak that dominates the Vitalonga vineyard of the same name, surrounded by holm oak woods, bordered by the Via Romea, the preferred route for pilgrims heading to Rome, where the soil is characterized by red clay and particularly rich in fossil shells. In the Elcione, Merlot and Cabernet blend together with Sangiovese, showing an Umbrian soul that adds charm and magic to the international flavor of the Bordeaux blend.

The color is a strong ruby red, the nose is charming and elegant with notes of wild berries, black cherry and spices. In the mouth it shows elegance, minerality and great pleasantness in the flavors of currant and graphite. The excellent organoleptic thickness and the polyphenolic content ensure excellent drinkability which can even improve year after year.

Once in the cellar, the grapes were destemmed, softly pressed and subsequently the must underwent a 10% racking. Fermentation in temperature-controlled stainless steel vats lasted two weeks, during which various pumping overs were carried out. After racking, the wine completed its malolactic fermentation directly in French oak barriques, where it remained for about six months. After bottling, the wine ages in the bottle for a further 6 months before being placed on the market.
