The restaurant, next to the cellar is surrounded by vineyards, amidst fruit trees and olive groves. Delectable aromas will greet you as you walk up the path past native herbal plantings and wildflowers. We breed pigs in large open pens who are on a natural diet to produce organic sausages, meat and cold cuts. The olive oil, also produced with the groves cultivated naturally on the estate, is only extra virgin. All the pasta is home made and desserts are prepared freshly every day. We select all other meats, dairy products and artisan breads from the best local producers.

The fruits of the land become the central element around which the chef’s creativity revolves in the effort to showcase the best local produce. Wine and food pairing is an obvious pursuit, to the point where wine is often the main ingredient in a recipe.

The result is a menu offering regionally inspired dishes prepared with only the best fresh seasonal ingredients: pecorino cheese wafers and organic quince jelly with red wine reduction, blu potato gnocchi with pancetta in a mint and sheepcheese sauce, organic pork chop roulade with wild fennel, wild berry and chocolate sauce tart.
